Mustard Panko-Crusted Tilapia

No stories here, found these delicious mustard panko crumbs in Whole Foods and voila! a masterpiece was in the works...

Mustard Panko-Crusted Tilapia with Garlic/Butter Aspargus
Ingredients:
  • Approx 1 lb fresh Tilapia - 4 filets
  • 1 box of mustard panko crumbs (4 oz)
  • 2 eggs
  • 1 1/2 cup flour
  • 3/4 lb asparagus
  • 3 tbsp butter/buttery spread - I use Earth Balance
  • 4 cloves fresh garlic




Turn your oven to BROIL. Place flour on a plate and sift so evenly spread across plate, do the same with half of the panko crumbs. Crack two eggs into a wide bowl and whisk until completely mixed.

Take each tilapia filet and completely cover with flour on each side.



Once floured, dunk the filet completely in egg and make sure flour is completely saturated.

Then remove from bowl and place on panko crumbs, flip and get the other side. Add remaining panko crumbs to plate as needed. Best not to have too much panko on the plate, as filets could get too heavily coated. You do want the filet completely covered but the panko crumbs easily stick so you could potentially over crumb your first two filets if all your panko is added to the plate first.




Place on cookie sheet (foil over cs works too) and spray lightly with cooking spray. Place each finished filet on the cookie sheet and put that bad boy in the oven!

(Broil for 5 minutes, remove and flip for another 5 more minutes. When you remove, cut into a thicker piece to ensure fully cooked.)





Meanwhile in veggie country...make sure those little green sticks are clean and the bottom ends are looking okay (cut the ends if they don't look clean/crisp)

Turn a stove burner onto medium heat and start to heat up the butter in a skillet pan. After fully melted, place pressed garlic cloves (finely chopped) into butter for 1 minute before adding asparagus.
Flip/mix the asparagus thoroughly with the garlic butter mixture and cover the pan (mixing up every few minutes). Takes about 10 minutes to cook al dente.


Finished Meal: VERY easy and one of the best this year to date!
Serve a lemon or lime (we got crazy) on the side. Great addition over the fish and veggies. And for added calories fun, have a slice of pound cake like I did (courtesy of Dan's client).
